last friday was me and casey’s FIVE year anniversary!
man, time flies when you are having fun!
i’ll get the sappy crap out of the way first and i’ll keep it short and to the point:
i just want everyone to know that casey is seriously the best husband. i know everyone thinks theirs is the best, but if you were a fly on the wall in our house and could see the kind of husband casey is to me, you would know and you would be jealous. i can assure you of that. he is above and beyond what i dreamed my husband would be.

ok moving on…
we’ve never really been gift givers on our anniversaries, or any holiday really. we prefer to go on a fancy date or plan a little get-away. so to celebrate 5 years, we went on the fanciest date we’ve ever had. casey made reservations at the melting pot, a fondue place. i wore a black dress with a fuchsia cardigan. casey dressed up by wearing pants that weren’t jeans AND TUCKED IN HIS SHIRT (if you know casey, you know that’s super dressed up for him). we looked hot.
when we got to the restaurant, the hostess took us to our table, which was all the way in the back. it was a little two person corner booth with really high walls. we couldn’t see anything or anyone around us; it felt like our own little private dinner – perfect!
when casey called to make the reservations he had them put a vase of roses on our table…it was sweet.
it probably took me 20 minutes to decide what i wanted to eat. everything sounded so, so good! here’s what we ate (you can skip over this part if you want):
cheddar cheese fondue – aged, medium-sharp cheddar and emmenthaler swiss cheeses, lager beer, garlic and seasonings. it came with a variety of breads, veggies, and green apple slices for dipping. IT WAS AMAZING.
casey’s: caesar salad – crisp romaine lettuce, caesar dressing, shredded parmesan cheese, crispy croutons, and an added touch of parmesan-encrusted pine nuts.
mine: spinach mushroom salad – fresh spinach, baby portobello mushrooms, red onion, chopped bacon and roma tomatoes with a warm burgundy shallot vinaigrette.
for the main course, we had to pick our meats and cooking style (what we cook the meat in). the main courses also came with broccoli, mushrooms, and red potatoes to cook as well.
cooking style: mojo – caribbean-seasoned bouillon with a distinctive fresh-garlic flavor and a citrus flair
casey’s meats: signature selection – filet mignon, white shrimp, teriyaki-marinated sirloin, breast of chicken, and cedar-plank salmon
my meats: land & sea – new york strip, breast of chicken, and white shrimp
yin & yang chocolate fondue – half dark chocolate and half white chocolate artfully swirled for a perfect balance of flavors. it came with strawberries, bananas, cheesecake, rice krispies, marshmallows, pound cake, and brownies for dipping.
every thing was delicious! the cheddar cheese fondue was the best part for me, which is saying a lot because you all know how much i love sweets and desserts!!
as good as the food was, i think i enjoyed our conversation more. we had a great conversation about each other and our marriage. the consensus at the end of the conversation was basically that we are both awesome and our marriage is above average.
the next day we got up and headed to atlanta to visit the aquarium. it was really crowded, but we got enjoyed our time there. after the aquarium, we walked to underground atlanta. it was OK. the stores are all weird…if they had normal stores, it would be really cool. after that we went to the varsity so casey could get a cheese burger, fries, and an orange slush thing. on our way home, we both thought about what our top 3 favorite things at the aquarium were. once we had them, we shared and of course they were the exact same! beluga whales, sea otters, and sea horses!
it was a fun, quick trip with my best friend!
