so one time my mom’s work had a chili cook-off and she decided to enter. basically she morphed several chili recipes (adding some ingredients on her own too) into one delicious batch of chili that ended up winning the cook-off! it was served in the cafeteria for a week! a couple weeks ago i shared that i made this chili and had several requests for the recipe. so, without further ado, here it is!
PUMPKIN, BLACK BEAN, AND TURKEY CHILI
2 tablespoons olive oil
1 small yellow onion, chopped
1 medium green bell pepper, cored, seeded and chopped
1 medium yellow pepper, cored, seeded and chopped
2 jalapenos, ribs and seeds removed, finely chopped
2 serrano peppers, ribs and seed removed, finely chopped
1 clove garlic minced
2 lbs ground turkey
3 cups chicken broth
2 (14.5 oz) cans diced tomatoes (chili style) with their liquid
1 (4 oz) can fire roasted diced green chiles
1 (15 oz) can pumpkin
2 ( 15 oz) black bean, rinsed and drained
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon cilantro leaves
1 teaspoon parsley
1 teaspoon whole mexican oregano
Brown turkey meat and drain
Heat olive oil and saute onion, peppers, and garlic until tender.
Mix everything together in crock-pot and cook on low for 4 hrs.
warning: this chili is spicy! if you can’t handle the heat, cut back on the spicy ingredients! obviously, you can tweak the recipe to suite your taste. for instance, for this last batch i left out the serrano peppers and black beans and added chopped zucchini.
